The idea that you can bake several kinds of Christmas cookies from a single dough sounds like a dream. But this recipe really delivers. From one basic buttery dough you can easily make five different variations – from nutty and coconut cookies, through fresh lemon Linzer with jam, to chocolate and pistachio pieces. Ideal when you want a rich Christmas plate but don’t want to spend days at the counter making ten different doughs.

Ingredients
Basic buttery dough
- 250 g butter (soft)
- 2 eggs
- 200 g powdered sugar
- 10 g vanilla sugar
- 1 teaspoon baking powder (approx. 7 g)
- pinch of salt
- 600 g all-purpose flour
Flavoring – 5 types of cookies
1) Nut cookies
- 1/5 of the dough
- 50 g ground almonds or walnuts
2) Coconut cookies
- 1/5 of the dough
- 2 tablespoons grated coconut
3) Lemon Linzer with jam
- 1/5 of the dough
- grated zest of 1 lemon
- 1–2 tablespoons lemon juice
- approx. 300 g apricot jam for spreading
4) Chocolate cookies
- 1/5 of the dough
- 100 g melted dark chocolate
5) Pistachio cookies
- 1/5 of the dough
- pistachio cream for spreading or filling
- powdered sugar for dusting
Method
1. Basic dough
- Beat the butter, powdered sugar and vanilla sugar until light and fluffy.
- Add the eggs and beat them well.
- Add the salt, baking powder and gradually the flour. Work into a soft, compact dough.
- Divide the dough into 5 equal parts.
2. Flavoring and shaping
Nut cookies: work in the nuts and shape into small balls or crescents.
Coconut cookies: work in the coconut and form small shapes.
Lemon Linzer: add the zest and juice, roll out, cut out shapes, after baking spread with jam.
Chocolate cookies: work in the chocolate, shape into balls or cut out shapes.
Pistachio cookies: after baking sandwich with pistachio cream or just spread and dust with sugar.
3. Baking
- Arrange everything on baking trays lined with baking paper.
- Bake at 180 °C for about 12–15 minutes, until lightly golden.
- Let cool on a wire rack.
