Choosing Christmas cookies doesn’t have to be complicated. Instead of dozens of types, just pick those that really make sense. These recipes are among the most popular, easy, budget-friendly and extremely tasty. Each recipe is simple, quick and anyone can manage it without much baking experience. And best of all – most of them are no-bake, so they save time before the holidays.

1) Žerbo kuličky

Ingredients

  • 150 g ground walnuts
  • 200 g ground butter cookies
  • approx. 300 g apricot jam
  • 1 teaspoon vanilla flavoring
  • 150 g cooking chocolate
  • 1 tablespoon oil
  • chopped walnuts for decoration

Method

  1. Mix the cookies with the walnuts and vanilla. Add jam so the mixture can be easily shaped – it must not be sticky.
  2. Chill for 1 hour in the fridge. Then shape into balls and chill them again.
  3. Melt the chocolate in a double boiler with the oil, dip the balls in it and sprinkle with nuts. Let set.

2) Barevné oplatky

Ingredients

  • 300 ml milk
  • 200 g sugar
  • 250 g butter
  • 200 g ground walnuts
  • 300 g ground cookies
  • 100 g cooking chocolate
  • 1 tablespoon vanilla flavoring
  • 1 pack of cake wafer sheets

Method

  1. Bring the milk with sugar to a boil, reduce the heat and stir in the butter until dissolved. Add the walnuts and cookies; add more cookies if needed so the cream thickens.
  2. Divide the cream into two halves – mix melted chocolate into one. Let both creams cool.
  3. Spread the wafers alternately with the light and chocolate cream, finish with a wafer. Weigh down and let set for 1–2 hours, then slice.

3) Karamelové griliážové tyčinky

Ingredients

  • 350 g sugar
  • 500 ml milk
  • 100 g white chocolate
  • 200 g butter
  • 250 g ground, pre-toasted walnuts
  • 350 g ground cookies
  • 8 sheets of cake wafer sheets
  • Coating: 100 g cooking chocolate + 2 tablespoons oil

Method

  1. Toast the nuts briefly on a baking tray at 180 °C (about 10 minutes), let cool and grind.
  2. Put the sugar into a pot and melt it into caramel over medium heat. Remove from heat and carefully pour in the milk. Return to the stove and stir until the caramel dissolves.
  3. Add the white chocolate and butter, stir until melted. Stir in the nuts and cookies.
  4. While still warm, fill the wafers with the cream (an even layer) and stack them. Weigh down with plastic wrap and a board and refrigerate for at least 3 hours, ideally overnight.
  5. The next day pour the chocolate coating, let it set and cut into bars.

4) Vánoční lískové kuličky s ganache

Ingredients

  • 200 ml water
  • 200 g granulated sugar
  • 150 g butter
  • 100 g cooking chocolate
  • 250 g ground cookies
  • 150 g ground roasted hazelnuts
  • for coating: approx. 150 g chopped hazelnuts
  • Ganache: 150 ml whipping cream, 100 g cooking chocolate

Method

  1. Roast the hazelnuts on a baking tray at 180 °C for 10–15 minutes, stir, peel and grind. Grind the cookies as well.
  2. Heat the water, sugar, butter and chocolate, stirring constantly, until everything combines and bubbles briefly (2–3 min). Stir in the ground cookies and hazelnuts.
  3. Chill in the fridge for 2–3 hours to cool and thicken. Shape into balls, roll them in chopped nuts and make a small well in the center. Chill.
  4. Ganache: Heat the cream just below boiling point, remove from heat, add the chocolate, let stand for 2–3 minutes and whisk until smooth. Cool, then fill the wells in the balls. Let set.

5) Rumové tyčinky z brambor

Potatoes in the dough aren’t noticeable – they only give it tenderness and moistness.

Ingredients

  • 300 g cooked, peeled potatoes
  • 100 g cooking chocolate
  • 100 g butter
  • 300 g ground cookies
  • 150 g powdered sugar
  • 1 tablespoon cocoa
  • 4–5 tablespoons rum
  • Coating: 120 g cooking chocolate + 2 tablespoons oil

Method

  1. Cook the potatoes until soft (about 30 min), drain and press through while still hot. Stir in the chocolate and butter and work into a smooth “chocolate puree”.
  2. Add the cookies, sugar, cocoa and rum. Spread the mixture on a baking tray lined with parchment paper and let cool.
  3. Melt the chocolate with the oil, spread on the surface, let set and cut into bars.

6) Sezamové kostky s medem

Ingredients

  • 200 g roasted sesame
  • 180 g honey
  • 120 g cooking chocolate
  • 150 g butter
  • 200 g ground cookies
  • 100 g coarsely chopped walnuts

Method

  1. Dry-roast the sesame in a pan (about 5 minutes), remove from the heat and stir for another minute.
  2. In a pot, melt the honey, chocolate and butter, stirring until combined and thickened.
  3. Stir in the cookies, sesame and nuts. Press the mixture into a pan lined with parchment paper, smooth out and refrigerate for several hours (preferably overnight). Cut into squares.

7) Kokosové kuličky s bílou čokoládou

Ingredients

  • 200 ml water
  • 100 g sugar
  • 150 g butter
  • 100 g white chocolate
  • 100 g grated coconut
  • 250 g ground cookies
  • grated coconut for coating

Method

  1. Heat the water, sugar, butter and white chocolate over medium heat and simmer briefly for 2–3 minutes.
  2. Stir in the coconut and cookies, mix well and chill in the fridge.
  3. Shape balls from the set mixture, roll in coconut and store in a cool place.
