Homemade baked pirohy are a treasure that carries the scent of childhood, grandma’s kitchen and honest ingredients. This recipe will teach you how to prepare tender, fluffy pirohy that you can fill with four types of delicious fillings – from the classic sauerkraut, through potato-and-bryndza to ham and cheese. And on top of all that you can also prepare a fragrant garlic tartar sauce that gives each bite the right kick.
Homemade pirohy from yeasted dough
The base is a soft yeasted dough that is easy to work with and holds its shape beautifully. Thanks to the yolks and oil it remains fluffy and soft even after baking.
Ingredients for the dough:
- 1,5 kg plain flour
- 3 dl oil
- 4 egg yolks
- 9 dl milk
- 2 cubes of yeast
- 1 KL salt
- 2 KL sugar
Instructions:
- Make a smooth dough from all the ingredients and let it rise thoroughly.
- Divide the dough into 4 parts and roll each into a sheet about 1 cm thick.
- Cut out circles, fill with a teaspoon of filling, fold and seal the edges.
- Place the pirohy on a baking sheet lined with parchment paper and let them proof for 15 minutes.
- Brush with egg and bake at 180 °C for approximately 12–15 minutes until golden.
Four delicious fillings
1. Cabbage filling
- Sauerkraut
- Smoked bacon
- 3 cloves of garlic
Fry the bacon, add the garlic and mix everything with the stewed cabbage. Season to taste.
2. Potato-and-onion filling
- Boiled potatoes
- Fried onions
- Smoked bacon
Warm the potatoes and mix them with the onions and bacon.
3. Potato-and-bryndza filling
- Mashed potatoes
- 125 g bryndza
- Fried onions
- Bacon
Stir the bryndza, onions and bacon into the mash.
4. Potato-and-ham filling
- Mashed potatoes
- Ham cut into cubes
- Processed cheese (e.g. Karička)
- Bacon
Mix everything thoroughly into a smooth mixture.
Optional garlic tartar sauce
Ingredients:
- 1 large tartar sauce
- 1 ČL Vegeta
- 1 ČL mustard
- 2 PL sour cream
- 1 ČL Worcestershire sauce
- 4 cloves of garlic
- Salt and pepper to taste
Mix all the ingredients and serve as a dip with the baked pirohy.
