Quince used to be part of almost every garden – fragrant, deep yellow fruits that ripen at the end of autumn are not only beautiful to look at, but also exceptionally healthy. Today they are often forgotten, while our ancestors considered them a natural remedy for the heart, blood pressure and digestion. This drink has not only a gently sweet taste and the scent of autumn, but also acts as a natural tonic for the body and mind.

🍯 How to prepare quince wine according to a traditional recipe

You will need:

  • 3 kg well-ripened, fragrant quinces
  • 2.5 liters of boiled and cooled water
  • 1 kg sugar
  • (optional) 1 tablespoon wine yeast or a little fermented must

🫗 Procedure:

  1. Wash the quinces well, remove the fuzz and cut into smaller pieces (leave the skin on, but remove the cores).
  2. Grate or blend into a pulp.
  3. Place into a large glass vessel or demijohn.
  4. Add the sugar, pour in the water and stir until the sugar dissolves.
  5. If you want to speed up fermentation, add wine yeast.
  6. Cover the vessel with a clean cloth or an airlock and let stand at 20–25 °C for 10–14 days.
  7. Stir the mixture every day.
  8. After fermentation has finished (when bubbles stop escaping) strain the liquid and pour it into bottles.
  9. Let the wine mature in a cool, dark place for at least 4–6 weeks – it will then acquire a full, rounded flavor with delicate fruity notes.

How to consume quince wine

Drink it chilled, in small amounts – ideally 1 small glass (about 100 ml) daily after a meal. You can also use it in desserts, fruit cups or to flavor compotes. It is not only a delicious drink, but also a natural remedy to strengthen the body during the cold months.
