This traditional recipe for homemade bread, passed down in our family for generations, will surprise you with its simplicity, flavor and long-lasting quality. It’s called „7-day bread“ because it remains soft and tasty even after several days. Natural fermentation and careful preparation make it an ideal bread for the whole week.

Preparation procedure

  • Preparing the starter In a small bowl, mix the yeast with a little warm water and a pinch of sugar. Let stand for about 10 minutes, until it begins to foam.
  • Kneading the dough Put the flour, salt and caraway into a larger bowl and add the prepared starter. Gradually add the rest of the water and knead the dough until smooth and no longer sticky. Cover with a cloth and let rise for at least 3 hours in a warm place.
  • Shaping and baking Form a loaf from the risen dough and transfer it to a baking sheet lined with parchment paper. Preheat the oven to 250 °C. Place the bread in and bake for 15 minutes. Then reduce the temperature to 220 °C and finish baking for another 35 minutes.
  • Finishing touch Immediately after removing from the oven, brush the bread with water to give it a shiny, softer crust. Let cool on a rack.

  • Preparing the starter and dough: 20 minutes

  • Proofing: at least 3 hours

  • Baking: 50 minutes

  • Total: approximately 4 hours 10 minutes
