Preparation procedure

  • Base: Preheat the oven to 180 °C. Whisk the eggs with the sugar until pale and fluffy, then whisk in the water. In a bowl mix the flour, baking powder and cocoa, fold the dry mixture into the eggs. Stir in the nuts. Spread the batter into a tin/baking sheet lined with baking paper (approx. 30×20 cm) and bake for 20–25 minutes, until a skewer comes out clean. Let cool completely.
  • Cream base: In part of the milk whisk the flour and egg with a whisk, bring the remaining milk to a boil. Pour the mixture into the hot milk and cook, stirring constantly, until thickened. Remove from the heat, cover with cling film (pressed directly onto the surface) and let cool to room temperature.
  • Finishing the cream: Beat the margarine with the icing and vanilla sugar until fluffy, beat in the cocoa. Gradually work in the cooled cooked base spoonful by spoonful. The cream must be smooth and airy.
  • Assembly: Spread the cream evenly over the cooled base and smooth.
  • Glaze: Melt the chocolate in a bain-marie, stir in the oil until glossy and pour a thin layer over the cream. Gently shake the tray so the glaze evens out.
  • Chilling: Chill for at least 4 hours, ideally overnight, to cool and set. Cut with a sharp knife heated in hot water.
