- Preparing the dough: Crumble the yeast into the lukewarm milk and let it activate for a while. Meanwhile, in a bowl mix the flour, sugar and butter. Add the yeast with the milk and work the dough. Let the dough rest for 20 minutes and rise slightly.
- Baking the dough: Divide the dough into four parts and roll each into a thin sheet. Bake the sheets on a baking tray lined with parchment paper for just a few minutes, until they are lightly golden. Adjust the baking temperature according to your experience with your oven.
- Preparing the cream: Combine all the ingredients for the cream (butter, sugar, flour, milk, lemon zest and juice) with a hand mixer until smooth and firm in consistency.
- Assembling the cake: Layer the cake alternately: dough sheet, layer of cream, dough sheet, cream. Repeat this process until you cover the top with the last sheet. Before serving, you can dust the cake with powdered sugar for decoration.
