Preparation procedure
- Dough preparation: Cut the softened butter (200 g) into cubes and place in a bowl. Add the powdered sugar and beat until smooth and fluffy. Add the egg and a pinch of salt, continue beating until the mixture is soft and smooth. Gradually add the sifted flour and work it into the dough. A fine, pliable dough will form. Place the dough into a greased tart pan and press it with your fingers onto the sides of the pan to create an edge at least 3 cm high. Prick the bottom of the dough with a fork to prevent it from rising during baking. Bake in a preheated oven at 180 °C for approximately 15–20 minutes, until the dough turns golden.
- Preparing the pudding filling: In a bowl, beat the egg yolks with the granulated sugar until light and fluffy. Then add the corn starch and vanilla sugar. Mix everything well. Pour the milk into the mixture and mix again. Then cook everything in a double boiler until a thick, lump-free pudding forms. Once the pudding starts to bubble slightly, remove it from the heat and let it cool completely.
- Finishing the cream: Beat the softened butter (100 g) until fluffy and gradually work it into the cooled pudding. Add the oil and mix everything thoroughly into a smooth cream. Place the finished cream in the refrigerator for a while.
- Assembling the tart: Spread the pudding cream over the cooled tart base and evenly cover it with fresh blueberries.
- Chilling: Place the tart in the refrigerator and let it chill for at least 1–2 hours so the cream can set.
