Ingredients: 6 eggs; A pinch of salt; 160 g sugar; 180 g semi-coarse flour; 2 teaspoons baking powder; Apricot jam; 5 bananas; 150 ml cream; 170 g chocolate; 400 ml milk; 1 teaspoon vanilla extract; 40 g sugar; 40 g cornstarch; 3 sheets of gelatin (5 g); 200 g mascarpone or cream cheese; 250 ml whipping cream

Preparation procedure

Preparing the batter: Beat the eggs with a pinch of salt and the sugar until thick and foamy. Then add the flour mixed with the baking powder. Mix thoroughly and pour onto a baking tray lined with parchment paper. Bake in a preheated oven at 180°C for about 15 minutes, until the batter turns golden. Let cool, then cut into two halves.
Preparing the chocolate ganache: Combine the cream and chocolate in a small saucepan and heat slowly until the chocolate is completely melted. Stir until smooth. Pour the finished ganache evenly over the cake layer that is covered with bananas.
Preparing the vanilla cream: In a saucepan, mix 300 ml of milk, the vanilla extract and the sugar. Add the cornstarch and mix well. Bring to a boil and cook until thickened. Let cool slightly. Soak the gelatin in cold water, squeeze out the excess and add it to the warm (not hot) cream. Stir thoroughly.
Preparing the mascarpone cream: Combine the mascarpone with 250 ml whipping cream and whip until foamy. Then add the vanilla cream and mix.
Assembling the dessert: Spread the prepared cream evenly over the layer with chocolate ganache. Place the second cake layer on the cream. Lightly press down and refrigerate for at least 4 hours, preferably overnight.
Serving: Before serving, you can decorate with chocolate glaze or whipped cream to your preference.
