Preparation procedure
- Preparing the dough: In a bowl, whisk 7 egg yolks with 200 g of sugar until foamy. Gradually add 12 tablespoons of water and then the flour, cocoa powder, baking soda and baking powder. Beat until smooth and pour it into a baking tin lined with parchment paper. Bake at 200 °C for about 15 minutes.
- Preparing the cream: In a saucepan, mix 500 ml of water, 2 packets of vanilla pudding and 4 tablespoons of sugar. Cook until thickened and then let it cool slightly. Meanwhile, whisk 7 egg whites until stiff peaks form and carefully fold them into the still-warm pudding.
- Finishing the cream: Spread the pudding cream evenly over the pre-baked dough and return it to the oven for another 5 minutes at 200 °C.
- Whipped cream: While the cake cools, whip the whipping cream with the stabilizer and vanilla sugar. Then spread the firm whipped cream evenly over the cooled cream cake.
- Final touch: Let the cake cool thoroughly in the refrigerator. Before serving, you can sprinkle cocoa on top for decoration.
