These almond moons are the perfect combination of delicate pastry, sweet egg-yolk glaze and rich chocolate-almond cream. The recipe comes from traditional cuisine and belongs to desserts that will immediately win your heart. They are suitable not only for Christmas but also as a festive treat with coffee or tea. Preparation procedure

  • Preparing the dough: Whisk the egg whites to stiff peaks. Beat the softened margarine with the sugar until fluffy, then add the ground almonds and the sifted flour. Finally, gently fold in the beaten egg whites.
  • Baking: Spread the batter on a greased baking tray and bake in an oven preheated to 180 °C until it begins to lightly brown.
  • Yellow glaze: While the dough is baking, beat the yolks with the powdered and vanilla sugar into a smooth, glossy foam. When the dough is about half baked, remove it from the oven and spread the yolk mixture over it.
  • Drying: Reduce the oven temperature to 100 °C and return the tray. Dry for approximately 50–60 minutes, until the surface sets and lightens. Then let cool completely.
  • Cream: In a small saucepan, cook the milk with the sugar. Add the broken chocolate, margarine and ground almonds to the hot milk. Stir until all ingredients combine into a smooth cream.
  • Finishing: Spread the cream over the cooled egg-yolk surface of the cake. You can sprinkle with ground almonds or nuts. Let cool completely and then cut out circles or half-moons.
