Preparation procedure

  • Preparing the dough: Preheat the oven to 180 °C. Mix the butter, sugar and honey over a double boiler until everything melts and combines. Then add the eggs and mix well. Mix the flour with the baking powder and gradually add it to the mixture. If the batter is too thick, add the milk and beat everything well with a hand mixer.
  • Baking: Line a baking tray with parchment paper and pour 1/4 of the batter onto it. Smooth the surface and bake for about 10 minutes. Repeat the same procedure for the next three layers of batter (so bake four sheets in total).
  • Preparing the cream: Cook a pudding from the milk, semolina and sugar. After it cools, whisk in the whipping cream so the cream is smooth and delicate.
  • Assembling: Spread half of the cream on the first sheet of batter. Add the second sheet of batter and spread it with apricot jam. Place the third sheet of batter and spread the remaining cream on it. Finally, cover with the last sheet of batter.
  • Glaze: Melt the chocolate in the cream and pour it over the top of the cake. Put the dessert in the fridge, ideally overnight, so all the layers set.
