Croissants don’t have to be complicated or time-consuming. This ‘no-rise’ one is still beautifully flaky, fragrant and with a delicate apple filling. Ideal for a weekend breakfast, with coffee or as a quick snack for guests – just let the dough rest briefly, fill and bake.

Preparation procedure

  • Dough: Place the flour, sugar, cinnamon and salt into a bowl. Add the margarine cut into pieces, the egg yolk and the milk. Quickly work into a smooth, non-sticky dough. Wrap and let rest for 40 minutes at room temperature.
  • Filling: Peel the apples and coarsely grate them. Let sit for a few minutes, squeeze out excess juice, mix with the sugar and cinnamon. Heat briefly in a pan to evaporate the moisture, and let cool.
  • Shaping: Roll the dough out on a floured surface into a large circle/rectangle, cut into triangles with a pastry wheel. Put a teaspoon of filling in the middle of each, roll from the wide side into a little roll and gently shape into a crescent. Place on a baking sheet lined with parchment paper with small gaps between them.
  • Baking: Bake in an oven preheated to 200 °C for about 30 minutes, until golden. Let cool briefly on a rack and dust with powdered sugar.

Tips

  • Keep the filling rather thick – the croissants will then be nicely flaky and won’t leak.

  • For extra fragrance add a pinch of grated lemon zest to the dough.
