  • Preparation of the apple layer Peel the apples, remove the cores and cut into thin slices. Line a baking sheet with parchment paper, lightly grease it with butter and spread the apples on it in an even layer.
  • Batter Beat the egg whites with a pinch of salt until stiff peaks form. Add the yolks one at a time and gradually beat in the sugar until a glossy mixture forms. Finally, gently fold in the flour with the baking powder. Divide the batter into two parts – add cocoa to one of them. Pour the light batter over the apples, level it and spread the cocoa batter on top. Gently tap the baking sheet on the table to even out the layers. Bake in a preheated oven at 180 °C for 25–30 minutes. Let cool completely and then invert the cake so that the apples are on top.
  • Cream Cook a thick pudding from the milk and pudding powder, and let it cool. Meanwhile, beat the margarine with the powdered sugar into a foam and gradually fold in the cooled pudding by spoonfuls. Spread the cream evenly over the apple base.
  • Glaze Mix the sugar, cocoa and milk in a small saucepan and cook over low heat, stirring, until the mixture comes together. Add the butter and stir until it melts and a smooth, glossy glaze forms. Let it cool slightly and pour it over the cake. Place the dessert in the refrigerator for at least 2 hours to set.
