They have a lightly crisp surface, a soft interior and a beautifully fragrant apple filling with apricot jam. Thanks to the combination of butter, cream and lemon juice the dough is tender and the pastries stay fresh for several days.

Preparation procedure

  • Preparing the dough: In a bowl, mix the flour with the baking powder. In another bowl, beat the butter with the egg, yolk and sugar. Add the sour cream, oil and lemon juice. Gradually add the flour and work into a smooth dough that does not stick.
  • Apple filling: Peel the apples and grate them coarsely. Steam them in a pot with the vanilla sugar until they soften. Then add the apricot jam and stir until the mixture thickens. Let cool.
  • Shaping and baking: Roll the dough into a thin sheet and cut into strips. Place a little apple filling on each strip and roll into a small roll. Transfer to a baking tray lined with baking paper. Bake in a preheated oven at 200 °C for a total of 25 minutes – first 20 minutes in the middle of the oven and then 5 minutes on the lower rack so the bottom browns nicely.
  • Finishing: After baking, let the rolls cool, cut them into 2–3 cm pieces and dust with powdered sugar to taste.
