Preparation procedure

  • Preheating the oven and pan: Prepare a baking tray sized 30 × 40 cm, line it with parchment paper or grease and flour it. Preheat the oven to 180 °C.
  • Preparing the dough: Cream the softened butter with the sugar until fluffy. Add the egg yolks and vanilla extract, continue beating. Pour in the milk, add the sifted flour mixed with the baking powder and the lemon zest. Beat everything until a smooth batter forms.
  • Assembling the base: Spread the batter on the prepared tray and arrange the drained apricots on top. Bake in the preheated oven for about 20 minutes, until the batter is firm to the touch.
  • Coconut foam: While the base is baking, prepare the foam. Whisk the egg whites with a pinch of salt into stiff peaks. Gradually add the sugar and beat until the mixture is glossy and firm. Finally fold in the coconut.
  • Finishing: After the first bake, remove the tray and spread the coconut foam evenly over it. Reduce the temperature to 150 °C and return the tray to the oven. Bake until the foam turns golden – about 10–15 minutes. Let cool completely and then cut into slices.
