Preparation procedure

  • Heating the milk: Pour the milk into a small pot and slowly heat it over medium heat.
  • Filtering: Once the milk is heated, strain it through cheesecloth or a fine sieve into another container.
  • Adding the ingredients: Add butter, salt, and baking soda to the strained milk.
  • Cooking: Place the pot back on the stove and slowly stir in the sour cream. Continue stirring for about 10 minutes, until the mixture reaches a creamy consistency.
  • Resting: Let the mixture sit over very low heat for a while so the flavors meld.
  • Shaping the cheese: Pour the mixture into several small containers according to the size you want the cheese to be.
  • Sealing: Close the containers with plastic lids and place them in the refrigerator or on a balcony/terrace where it is sufficiently cool.
