Preparation procedure

  • Preparing the dough: In a bowl, mix the sifted flours, baking powder and salt. Make a well in the centre. In another container, combine the milk with the melted butter and pour the mixture into the centre of the dry ingredients.
  • Handling: Using a wooden spoon or your hands, bring the dough together. It should be soft, sticky and pliable. Transfer it to a lightly floured work surface and knead briefly – about one minute, until you have a smooth dough.
  • Shaping and decorating: Shape into a round loaf and place it on a buttered baking sheet. Brush the surface with milk and lightly dust with wholemeal flour. For appearance, you can make X-shaped cuts about 2 cm deep (optional, but decorative).
  • Baking: Preheat the oven to 220 °C and bake for 15 minutes. Then reduce the temperature to 180 °C and bake for another 25 minutes, until the bread is nicely golden. It should sound hollow when tapped – that's a sign it's properly baked.
  • Cooling: Let the finished loaf cool on a wire rack so it stays nicely moist and no moisture forms on the bottom.
