Preparation procedure

  • Dissolve the yeast in warm milk, leave it like that for 5 minutes and cover it with a cloth or other fabric.
  • Melt the butter, pour it into a bowl and let it cool.
  • In another bowl, mix the yolks with half of the sugar and then add them to the butter.
  • Now you can pour in the milk with the yeast.
  • Add a pinch of salt to the flour and sift it through a sieve.
  • Slowly add it to the mixture while stirring constantly to minimize lumps.
  • Knead the dough and let it rest for 30 minutes in a warm place.
  • While the dough is rising, grind the nuts in a blender, add the remaining sugar and the cinnamon.
  • Before baking, wrap aluminum foil or cling film around the cardboard cylinders and grease them with oil up to the top of the foil.
  • Take the dough and divide it into 8 pieces.
  • Roll them into sausage shapes about 1.5 cm thick and wrap them around the roller so that a cylindrical shape is formed.
  • Brush the dough with lightly beaten egg whites, sprinkle with nuts and cinnamon.
  • Place the cylinders on the edges of the pan so that they do not touch its bottom.
  • Bake the trdelník for 25–30 minutes in the oven at 180 degrees.
