Roulades are popular not only in sweet form, but also as a hearty main course. This recipe offers a great combination of smoked pork knuckle, juicy chops, grated cheese and crispy bacon. A perfect choice for a family lunch or a summer get-together.

Preparation procedure

  • Preparing the meat: First boil the knuckle in water until tender. Then let it cool and trim the meat from the bone. Dice the onion, sauté it in butter, mix it with the meat and let it cool in the refrigerator.
  • Marinating the chops: Marinate the chops in your favorite marinade (we recommend oil, garlic, salt and spices) and let them rest overnight.
  • Preparing the roulade: Preheat the oven to 180 °C. Line a pan with bacon slices so they hang over the edges. Sprinkle a little grated cheese on the bottom.
  • Layering: Coat the chops in flour and beaten eggs and arrange them on the cheese in the pan. Then add a layer of the knuckle meat mixed with onion. Add another layer of grated cheese on the meat.
  • Wrapping: Carefully wrap the chops and filling in bacon so that a compact roulade forms. If the bacon slices are not enough, add more.
  • Baking: Bake for about 1 hour. After baking, turn the roulade and let it bake for another 5 minutes so the bacon is crispy on all sides.

Serving tips

Serve the roulade with fresh bread, mashed potatoes or a vegetable salad. For a festive appearance, slice it and garnish with fresh herbs.
