These small Bavarian doughnuts will captivate with their lightness and delicate flavor. Their airy dough gives them a lacy, cobweb-like appearance and they stand out with the combination of sweet plum jam and quark with whipped cream. From one batch you’ll get approx 60 doughnuts, ideal as a snack with afternoon coffee or an enticing dessert for celebrations.

Preparation procedure

  • Preparing the starter Crumble the yeast into lukewarm milk, add a tablespoon of flour and a little sugar. Mix and let the starter rise for 10 minutes.
  • Making the dough In a bowl, cream the butter with the remaining sugar, add the egg yolks and beat until frothy. Stir in the rum, lemon zest and salt. Add the starter and gradually pour in the remaining milk and the flour. Work into a smooth dough.
  • First rise Cover the dough with a cloth and let it rise in a warm place for about 60 minutes, until it doubles in volume.
  • Shaping the doughnuts Roll the risen dough out to a thickness of 1 cm. Cut out circles (5 cm diameter), place them on a baking sheet lined with parchment paper and let rest for 10 minutes.
  • Frying Heat oil in a deep pan (3–4 cm depth). Place the doughnuts with the indentation facing down and fry on both sides until golden (about 2–3 minutes per side). Let the finished ones drain on paper towels.
  • Preparing the quark filling Mix the quark with the vanilla sugar and the lightly whipped cream.
  • Filling and decorating Let the doughnuts cool, fill the indentations first with plum jam and then with the quark cream. Finally, sprinkle with powdered sugar.
