Preparation procedure

  • Mix the dough. Beat the margarine, sugar, eggs and sour cream until smooth. Pour in the oil, add the ground nuts and mix. Combine the flour with the baking powder and work it into the dough in portions – add just enough so that the mixture no longer sticks to your hands, but isn't hard.
  • Let it rest. Wrap the dough and place it in the refrigerator for 1 hour to firm up.
  • Fill the molds. If needed, lightly grease the paw molds (usually not necessary because of the fatty dough) and fill them with a thin layer of dough up to the edge. Level.
  • Bake. Put in an oven preheated to 200 °C and bake for about 20 minutes, until the edges are lightly browned.
  • Finishing. Carefully unmold the still-warm paws and coat them in powdered sugar. Let cool.

Time and servings

Total time: 1 hr 40 min (active approx. 30 min)

Servings: approx. 40–50 pieces (depending on the size of the molds)

Note: 1 cup = 250 ml

Tips and storage

  • Don’t over-flour the dough: add flour only until it stops sticking – the paw cookies will be more tender.

  • Sugar adheres best to warm pastries, so coat them immediately after unmolding.

  • Store in a tin in a cool place; the flavors develop nicely by the next day.

Conclusion

Bear paws are a quick classic that never disappoints. Thanks to the high proportion of nuts they are fragrant and tender and are great for a festive cookie collection as well as a sweet handmade gift.
