Bishop’s loaf is a simple and exceptionally tasty dessert that will fill your home with fragrance. Thanks to raisins, candied fruit and walnuts it gains a unique flavor and texture. It is perfect with tea or coffee and is ideal for festive moments with family.

Preparation procedure

  • Preparing the batter In a bowl, mix the flour, baking powder and a pinch of salt. In another bowl put the eggs, sugar, oil and whisk. Gradually add the milk and vanilla extract until you obtain a smooth mixture. Gradually add the liquid mixture to the flour and mix everything thoroughly to form a smooth batter.
  • Preparing the filling Cut the unpeeled apple into small cubes, add the lemon zest and juice. Fold in the raisins, chopped nuts, candied fruit and a tablespoon of flour so the ingredients bind together.
  • Layering and baking Grease and flour the pan for the bishop's loaf. Pour 1/3 of the batter, add part of the fruit mixture, then another layer of batter and the rest of the fruit. Finally pour over the last layer of batter. Bake in a preheated oven at 180 °C for about 40–45 minutes, until the surface is golden.
  • Glaze and decoration Mix the sugar with a little milk and heat briefly in the microwave. Pour the glaze over the cooled loaf and sprinkle with candied fruit and nuts.
