This simple and healthy loaf is a perfect choice for breakfast, especially if you’re trying to lose weight or maintain a healthy lifestyle. Thanks to the oats, kefir and seeds, it’s full of fiber, protein and healthy fats, which will pleasantly keep you full throughout the morning. And best of all? You don’t need yeast or long proofing!

Preparation procedure

  • Preheating the oven: Preheat the oven to 180 °C.
  • Mixing the dry ingredients: Pour the oat flakes, a pinch of salt, baking soda and seeds into a bowl. Mix everything thoroughly.
  • Adding the wet ingredients: Add the kefir (or yogurt), egg and apple cider vinegar to the mixture. Mix everything until you obtain a smooth, uniform batter.
  • Preparing the pan: Line a 20 x 10 cm loaf tin with baking paper or lightly grease it with oil. Pour the prepared batter into the pan and sprinkle the top with seeds to taste.
  • Baking: Bake in the preheated oven for 30–35 minutes, until the loaf turns golden and is cooked through. (Test with a skewer – if it comes out dry, it's done.)
  • Cooling and serving: Let the finished bread cool on a wire rack and then slice it.

  • The loaf yields 6–8 servings.
