These quick pickled tomatoes are ready in 40 minutes without cooking or canning. They are crunchy, aromatic and perfectly complement grilled meat, skewers and cheese platters. Store them in the refrigerator for up to a week.

Preparation procedure

  • Preparing the tomatoes and onion Wash the tomatoes, dry them and cut into quarters (or into smaller pieces). Slice the onion into thin half-rings. Prepare the herbs and garlic finely.
  • Filling the jar In a clean sealable jar, layer the tomatoes, onion and chopped herbs alternately until the jar is full.
  • Preparing the marinade In a bowl, mix the oil, honey, soy sauce, lemon juice, salt and pepper. Add the pressed garlic and the finely chopped dill and parsley. Mix thoroughly.
  • Marinating Pour the marinade into the jar so the vegetables are completely submerged. Close the jar tightly, turn it several times and mix. Let sit for 5–10 minutes on the counter, then transfer to the refrigerator for at least 30 minutes (ideally 2–3 hours).
  • Serving and storage Serve with grilled meat, skewers, roasted dishes or with cheese and bread. Store in the refrigerator for up to 5–7 days.
