Preparation procedure

  • Dough preparation Sift the flour into a bowl, add the sugar, baking powder, softened butter, egg yolks and sour cream. Work into a smooth semi-firm dough. Divide it into two parts – one will be the bottom, the other the top. Put the dough in the refrigerator to rest for 15 minutes.
  • Apple filling Peel the apples and cut them into small pieces. Melt the butter in a pan, add the apples, sugar and cinnamon. Gently stew briefly until the apples soften but do not break down. Remove from the heat and stir in the peach jam.
  • Assembling the cake Roll out the bottom portion of the dough and place it into a pan lined with baking paper. Spread the apple filling evenly. Roll out the second portion of dough, place it on top and press lightly.
  • Sugar glaze Whisk the egg whites with the powdered sugar into a thick smooth glaze. Spread the glaze evenly over the top of the dough.
  • Baking Bake in an oven preheated to 180 °C for approximately 45–50 minutes, until the glaze turns golden and the dough is cooked through.
  • Finishing After cooling, lightly brush the cake with a thin layer of peach jam to enhance flavor and shine. Slice and serve.
