Preparation procedure

  • preparation of the cheese cream Pour the cream into a pot, add the egg yolks and mix thoroughly. Gradually add the grated Edam and smoked cheese (reserve 50 g of Edam for garnish). Heat the mixture slowly until it thickens – but do not let it boil! Once the mixture has cooled, add the soft butter and whip into a fluffy cream. Season with salt, pepper and nutmeg. Transfer the cream into a piping bag fitted with a decorative tip and place in the refrigerator to cool.
  • preparation of the dough Roll out the puff pastry to a thickness of 2–3 mm and cut into strips 2 cm wide.
  • shaping and baking the rolls Wrap the pastry strips around metal tubes – they must be neither too loose nor too tight. Place the rolls on a baking sheet lined with parchment paper, brush with beaten egg and bake in a preheated oven at 210 °C for about 10 minutes, until golden.
  • filling and finishing After baking, let the rolls cool slightly and carefully remove them from the tubes. Once they are completely cold, fill them with the prepared cheese cream and sprinkle the ends with the remaining grated Edam.
