Cheesy zucchini crackers are ideal when you want a quick and lighter savory treat from a few ingredients. The base is grated zucchini and cheese, which together with the eggs turn into thin crispy sheets – perfect with dips, salads or on their own.   • Preparing the zucchini Grate the zucchini coarsely, lightly salt it and let it release its juice for 5–10 minutes. Thoroughly squeeze out the water (you can use a clean cloth), so the mixture isn't watery.
  • Basic mixture Beat the eggs, mix them into the well-squeezed zucchini. Grate the cheese finely. Add about 300 g to the mixture, season with pepper and optionally herbs or garlic. Mix.
  • Baking Preheat the oven to 180 °C (fan 160 °C). Line a baking sheet with parchment paper and spread the mixture into an even layer 0.5–1 cm high. Bake for 15–20 minutes, until the surface begins to turn golden.
  • Finishing with cheese Take out the sheet, sprinkle with the remaining ~100 g of cheese and return to the oven for 5–7 minutes so the cheese melts and lightly browns.
  • Serving Let cool briefly, then cut into sticks or squares. Serve on their own or with your favorite dip (yogurt, garlic, herb).
