Preparation procedure

  • Cherry layer Bring the juice with the sugar to a boil. While stirring constantly with a whisk, gradually pour in the semolina in a thin stream and cook 3–5 minutes until a thick, smooth porridge. Immediately spread into the pan and let cool to room temperature (approx. 20–30 minutes).
  • Vanilla layer From the milk, sugar and pudding powders cook a thick pudding. Into the still-warm but not boiling pudding stir in the butter and mix until smooth. Carefully pour onto the set cherry layer and smooth. (If you like, spread drained cherries over the surface.)
  • Whipped cream topping Prepare the whipped cream according to the instructions (or whip the cream until stiff, optionally with a stabilizer) and spread it evenly over the cooled vanilla cream.
  • Chilling and cutting Refrigerate the dessert for at least 4 hours, ideally overnight. Cut with a sharp knife warmed in hot water and wiped after each cut.

Total preparation time 25–30 minutes of work + 4–6 hours chilling

Number of servings: 8

Tips and Variations

  • Sweetness and acidity: Adjust the sugar in the cherry layer to taste; with 100% juice the dessert is refreshingly tart.

  • Firmer slices: When using cream add a stabilizer; for powdered whipped cream follow the liquid ratio exactly.

  • Gluten-free variant: Replace wheat semolina with corn semolina (the texture will be slightly different, but the layers hold).

  • Serving: Great with sliced almonds, grated chocolate or a light cocoa dusting.

Conclusion

The cherry-vanilla no-bake dessert is a summer classic that delights with its freshness and simplicity. The layers meld beautifully during chilling, the slices hold their shape and the flavors are perfectly balanced. Make it a day ahead so it can really “settle” after cooling – the reward will be a dessert that disappears in no time.
