Preparation procedure

  • Put the ground sponge biscuits, nuts, chestnut purée, softened butter and rum into a bowl. Work with your hands into a uniform mixture.

  • Cut the hardened log into slices about 1 cm thick.
  • Melt the chocolate in a double boiler and mix with the oil so it becomes thinner but still adheres to the slices.
  • Dip the chestnut tongues in the chocolate, place on a rack and let them harden in the refrigerator.
