Do you want a quick, tasty and low-effort lunch or dinner? This chicken casserole is made literally by stacking the ingredients into one baking dish, baking it and that’s it – it’s really worth trying.

Preparation procedure

  • Marinating the meat Brush the washed and dried chicken quarters with oil and thoroughly coat them in the seasoning. Transfer to a sealable container and leave in the fridge for at least 8 hours (preferably overnight).
  • Preparing the vegetable mixture Clean the potatoes and halve them. In a bowl mix the potatoes, onion, tomatoes, pepper, bacon, garlic, oil, tomato paste and half of the herbs. Add salt and pepper and stir.
  • Assembling the baking dish Grease the baking dish with a little oil. Place the marinated chicken quarters. Fill the gaps with the prepared vegetable‑potato mixture. Sprinkle with the remaining herbs.
  • Baking Cover the dish and bake in a preheated oven at 200 °C for 60 min. Remove the lid, turn the meat so it is on top, and finish baking for 30 minutes until golden and nicely crispy.
  • Serving You can serve the finished casserole directly from the baking dish. It goes great with fresh bread or a light vegetable salad.
