Preparation procedure

  • Beat the egg yolks with the sugar and butter until thick and fluffy. Add the milk, lemon zest, flour and baking powder. Divide the dough into two parts, one larger and one smaller.
  • Grate the apples and mix with the sugar, cinnamon sugar, pudding mix, rum and, if desired, raisins. Briefly simmer in a pan so that the liquid evaporates.
  • Roll out the larger portion of the dough and place it in the baking pan. Spread the apple filling evenly and cover with the second, thinner layer of dough.
  • Bake in a preheated oven at 180 °C for approximately 25–30 minutes.
  • Whisk the egg whites with the lemon juice into a meringue. Gradually add the sugar and finally fold in the coconut. Spread the meringue onto the cake and bake for another 10–15 minutes at 160 °C until golden.
