Preparation procedure
- Dough preparation: In a bowl beat the eggs with the sugar, vanilla sugar, softened butter and yogurt until smooth. Add the coconut and the vanilla pudding mix. In another bowl mix the flour with the baking powder and gradually add it to the wet mixture. Work into a smooth dough, wrap it in cling film and place it in the refrigerator for at least an hour.
- Filling preparation: Meanwhile prepare the coconut pudding according to the instructions on the package – mix the pudding mix with the sugar and milk and cook it. Let it cool.
- Shaping and baking: On a floured work surface roll out the dough to approximately 4 mm thickness. Cut out little flowers and place them on a baking sheet lined with parchment paper. In half of the flowers you can cut a small window (for a petal effect). Bake in a preheated oven at 200 °C for about 12 to 15 minutes, until the cookies remain light-colored.
- Finishing: Fill the cooled cookies with the prepared coconut pudding and sprinkle with a mixture of powdered and vanilla sugar.
- Storage: Store the cookies in a cool, dry place.
