This simple cocoa cake with apricot jam has been baked in our family for generations. Thanks to the juicy apricot filling and the delicate cocoa batter, it always evokes the scent of great-grandmother’s kitchen and delights both young and old.

Preparation procedure

  • Preparing the batter In a bowl, beat the egg with the granulated sugar until light and frothy. Add the softened butter and beat together. Stir in half of the milk and the cocoa powder to form a smooth cocoa mixture without lumps. Gradually pour in the remaining milk and the sifted flour mixed with the baking powder.
  • Baking Preheat the oven to 180 °C (fan 160 °C). Pour the batter onto a baking tray lined with parchment paper and smooth the surface. Bake for 30 minutes; check doneness with a skewer – it should come out dry when inserted.
  • Filling and finishing Let the baked cake cool, then cut it lengthwise into two halves. Spread a thick layer of apricot jam on the bottom half and top with the other half. Dust the surface with powdered sugar.
