Ingredients: 4 egg whites; 200 g sugar; 1 tablespoon semi-coarse flour; 1 teaspoon baking powder; 200 g grated coconut; 200 g dark chocolate; 6 tablespoons oil; 4 egg yolks; 3 tablespoons corn starch; 250 ml milk; 6 tablespoons sugar; 2 packets of vanilla sugar; 100 g dark chocolate; 250 ml whipping cream; Grated chocolate or chocolate glaze

Preparation procedure

Preparing the dough: Beat the egg whites into stiff peaks. Gradually add the sugar and beat until the sugar dissolves. Sift the flour mixed with the baking powder and coconut, gently fold with a whisk. Pour the batter into a pan lined with baking paper and smooth the surface. Bake in a preheated oven at 180 °C for about 20 minutes. Let cool.
Chocolate layer: Melt the chopped chocolate with the oil over a double boiler. Spread the chocolate evenly over the cooled cake. Put it in the refrigerator to allow the chocolate to set.
Preparing the cream: In 100 ml of milk, whisk together the corn starch and egg yolks. Mix the remaining milk with the sugar and vanilla sugar, bring to a boil. Add the egg yolk mixture to the hot milk and cook, stirring constantly, until the cream thickens. Remove from the heat, add the chopped chocolate and stir until the chocolate melts. Let cool, stirring occasionally to prevent a skin from forming. Whip the whipping cream to stiff peaks and gently fold it into the cooled cream.
Assembling the pastry: Spread the prepared cream evenly over the chocolate layer. Smooth the surface and decorate with grated chocolate or chocolate glaze. Place the pastry in the refrigerator for 1–2 hours to set well.
