Coconut hedgehogs are among popular Czech pastries that many remember from childhood. This time, however, we bring you a more modern version – with white chocolate, yogurt and a delicate hint of coffee. The result? Incredibly moist, fluffy squares that melt on the tongue.

Preparation procedure

  • Preparation of the batter In a bowl, mix the flour, cocoa and baking soda. In another container, whisk the eggs with the sugar until foamy, then pour in the coffee and yogurt. Finally, gradually work in the dry mixture and beat into a smooth batter.
  • Baking Pour the batter onto a baking tray lined with baking paper and bake in an oven preheated to 180 °C for about 40 minutes. Let the baked base cool completely, then remove it and cut it into equally sized cubes.
  • Preparation of the glaze Pour the milk into a pot, add the butter, sugar and white chocolate. Heat over low heat and stir until all the ingredients have melted into a smooth glaze.
  • Finishing Dip each cube on all sides into the warm chocolate mixture and then coat it in grated coconut. Place on a rack or baking paper and let set.
