Delicate coconut sticks literally melt in your mouth and anyone can manage to make them. With a minimal number of ingredients you’ll create a moist and aromatic dessert that goes well with coffee, as a healthier snack, or on a festive table. The recipe also contains no flour or gluten — you only need coconut, egg whites, and sugar.

For 12 portions

Ingredients

Shredded coconut: 200 g

    Powdered sugar: 100 g

      Egg whites: 3 pcs

        Vanilla sugar: 1 packet (10 g)

        Preparation procedure

        • Preparing the egg whites Separate the yolks from the whites (keep the yolks for a cream or baking). Put 3 egg whites with a pinch of salt into a clean, degreased bowl and whisk them to stiff peaks so the mixture holds its shape.
        • Sweetening and flavoring Add 100 g powdered sugar and 1 packet of vanilla sugar to the stiff meringue. Whisk again until the sugar is fully incorporated and the meringue holds slightly.
        • Folding in the coconut Gently fold 200 g of shredded coconut into the sweetened meringue with a spatula. Fold a few times lightly so the coconut is evenly combined with the meringue and no air is incorporated.
        • Shaping the sticks Preheat the oven to 160 °C (fan) or 180 °C (conventional). Line a baking sheet with parchment paper. Shape 12 – 16 smaller rolls or triangles from the coconut mixture by hand or with a spoon. Place them on the sheet with a small gap between each.
        • Baking Place the sheet in the preheated oven and bake for 15 – 20 minutes, until the coconut sticks are golden at the edges. The surface should remain slightly pale and the tops slightly set.
        • Finishing After baking, let the sticks cool on the sheet for 5–10 minutes, then transfer them to a rack to cool completely. Store them in an airtight container – they will stay soft for up to a week.
