  • Place the water in the fridge to chill for at least 60 minutes (or use ice-cold water straight from the refrigerator).
  • Pour the sugar and instant coffee into a bowl, then add the measured cold water.
  • Whip with the beaters of an electric mixer for 2–3 minutes, until a stiff, airy foam forms that holds its shape.
  • Fill glasses, or decorate a dessert with the coffee foam. Serve immediately.
