Coleslaw is one of the quickest salads: crunchy white cabbage, sweet carrot and a delicate mayonnaise dressing with apple cider vinegar and mustard. Ready in a few minutes and tastes great immediately, but it’s even better after resting.

  • Vegetables: Finely shred the cabbage, grate the carrot and optionally add finely chopped onion. For extra tenderness you can lightly sprinkle the cabbage with ½ teaspoon of salt, rub it and let it sit for 5 minutes to soften, then gently squeeze out the excess juice.
  • Dressing: In a bowl, mix the mayonnaise with the apple cider vinegar, sugar and mustard. Season with salt and pepper.
  • Mixing: Fold the dressing into the vegetables so everything is evenly coated.
  • Resting (recommended): Cover and let rest in the fridge for 20–30 minutes; the flavors will meld nicely.
