Preparation procedure

  • Preheating the oven Set the oven to 180 °C and prepare a smaller baking tray or cake pan – grease it with butter, or line it with parchment paper.
  • Batter In a bowl, whisk the eggs with the sugar until pale and frothy. Pour in the melted butter and mix. Sift in the flour and baking powder and mix into a smooth, slightly thicker batter. Spread the batter over the bottom of the pan.
  • Quark filling In another bowl, combine the quark, eggs, sugar, vanilla and melted butter. For a smoother consistency, briefly blend with an immersion blender. Pour the filling evenly over the batter.
  • Fruit layer Arrange the apple slices on the quark layer and sprinkle the blueberries evenly. The fruit will partially sink during baking, which adds juiciness to the cake.
  • Baking Place the cake in the preheated oven and bake for 40–50 minutes. The surface should be lightly golden and a skewer inserted into the center must come out clean.
  • Serving Let cool for 15 minutes, then dust with sugar and serve. It is excellent warm or chilled.
