Preparation procedure
- 1. Preparation of the dough: Heat the milk over the heat, add the butter, sugar and vanilla sugar. Stir until everything has dissolved and the milk becomes warm. Remove from the heat and let it become lukewarm. Add the egg yolks and crumbled yeast to the milk. Mix well and let sit for a while.
- 2. Kneading the dough: Sift the flour into a bowl, add the grated lemon zest and salt. Pour in the prepared milk and work the dough. Let it rise thoroughly.
- 3. Preparation of the cream pudding: Prepare the cream pudding according to the instructions with the milk and sugar, cook until thick. Let it cool.
- 4. Shaping the rolls: Roll the risen dough into a rectangle approximately 25 × 35 cm. Cut into 16 squares. On one side of each square make slits across the entire width. Put an appropriate amount of pudding into each square and roll so that the slits form the top of the roll.
- 5. Baking: Line a baking sheet with parchment paper and place the rolls next to each other. Beat the egg yolks and brush each roll on top. Let them rise on the sheet for another 20 minutes.
- 6. Oven: Preheat the oven to 150 °C and bake for approximately 30 minutes, until the rolls are golden. After baking, sprinkle them with powdered sugar and serve while still warm.
