Dough preparation: Pour the water into a pot, add the butter and salt. After the butter has melted bring to a boil, remove from the heat and stir in the flour. Stir quickly until there are no lumps. Return to the hob and stir for another 2–3 minutes so the dough dries out. Let cool slightly.
Cream: Cook a thick pudding from the milk, sugar and pudding powder. You can add rum. Cover with cling film and let cool. Then beat together with the butter until smooth.
Beating in the eggs: While the dough is still warm, gradually beat in the eggs – one at a time. The consistency must be smooth, glossy and such that it can be easily piped with a pastry bag.
Shaping and baking: Fill the dough into a pastry bag fitted with a decorative tip. Pipe the rings onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for about 35 minutes. Do not open the oven during baking!
Whipped cream and filling: Whip the cream until stiff. Slice the rings, fill the bottom half with the cream, add sliced strawberries and whipped cream, and top with the upper half. Lightly dust with powdered sugar.
