  • Preparation of the cauliflower Thoroughly rinse the cauliflower and divide it into smaller florets. Place them in a pot with 1 liter of lightly salted water and cook for about 15 minutes until tender. Then drain the cauliflower, keep the broth and set the florets aside.
  • Soup base In a clean pot melt the butter, add plain flour (about 1–2 tablespoons if you want the soup thickened) and briefly sauté it in the butter. While stirring constantly, pour in the cauliflower broth and cook for about 7 minutes.
  • Seasoning and smoothing Remove the soup from the heat. In a bowl whisk the yolk with the cream and slowly stir into the hot (but not boiling) soup so the egg does not curdle. Season with salt, pepper and a pinch of nutmeg.
  • Finishing Add the cooked cauliflower florets to the finished soup and let warm for a few minutes. Serve hot, optionally with fresh bread.
