  • Chilling Cover the ganache with cling film so that it touches the surface of the cream, and chill it in the refrigerator for at least 2–4 hours, ideally overnight.
  • Whipping After chilling, whip the ganache with a hand or stand mixer into a fluffy cream. At this stage it is ready for filling, decorating and garnishing.
