A light yet distinctly chocolatey cream with Nesquik and three fluffy layers (brown, yellow and white) create an impressive “striped” slice. The cake is rich, holds its shape well and is enjoyed by both adults and children. The method is simple, just allow time for chilling.

Preparation procedure

  • Brown layer Whip the egg whites with the sugar until stiff peaks form. Gently fold in the chocolate pudding with a spatula. Spread into a tin lined with baking paper and bake at 180 °C for about 15–20 minutes. Let cool completely, remove the paper.
  • Yellow layer Repeat the procedure, using vanilla pudding instead of chocolate.
  • White layer Again the same procedure, only fold the cornstarch into the egg whites. For all the layers watch that they do not overbake – once the edges begin to pull away from the tin they are done.
  • Cooked custard base Beat the egg yolks with the sugar, flour and 200 ml of milk until smooth. Bring the remaining 800 ml of milk to a boil, pour in the yolk mixture while stirring constantly and cook a thick custard. Stir 200 g of Nesquik into the hot mixture. Cover with cling film directly on the surface and let cool completely.
  • Butter part and combining Beat the margarine/butter until fluffy, gradually beat in the cold cooked custard and the second 200 g of Nesquik. Beat until smooth. Divide the cream into 3 equal portions.
  • Whipped cream layer Whip the powdered whipping cream with cold milk until firm (or whip cream with stabilizer). Divide into 3 portions.
  • Assembling the cake Place the white layer on a board. Spread 1 portion of the Nesquik cream and 1 portion of whipped cream. Place the yellow layer on top, again cream + whipped cream. Finally the brown layer, the last portion of cream and whipped cream. Smooth with a spatula.
  • Chilling and slicing Place the cake in the refrigerator for 3–4 hours (ideally overnight). Slice with a sharp, warmed knife.

Tips for guaranteed results

  • Bake the cake layers for a shorter time rather than longer – overbaked layers crack and aren’t fluffy.

  • The cooked custard and the fat must be at the same temperature, otherwise the cream will curdle.

  • When whipping the cream, don’t incorporate unnecessary air — the slices will be neat and firm.

  • For a festive look, dust the top with cocoa, chocolate shavings or decorate with a chocolate glaze.
