Looking for a meatless recipe that’s filling, full of flavor and not prepared by frying? These baked cauliflower-and-potato balls are an ideal choice.

Beautifully crispy on the outside, soft and moist inside. Thanks to the combination of potatoes, cauliflower, Parmesan and spices they have a pronounced flavor that will appeal even to die-hard meat-eaters.

A major advantage is that they are baked in the oven, so they are lighter than traditional fried patties. They work great as an appetizer, warm snack, side dish, or treat for guests. Paired with a simple tomato-mustard dip they make a perfectly balanced meal.

Preparation procedure

  • Preparing the potato Prick the potato with a fork and place it in the microwave for about 7 minutes, until tender. Let it cool briefly, peel and mash into a smooth purée.
  • Preparing the cauliflower Briefly boil or steam the cauliflower until soft. Let it drain and chop finely. Make sure it is not watery.
  • Combining the mixture In a large bowl put the mashed potato, cauliflower, breadcrumbs, Parmesan, starch and egg. Add turmeric, paprika, hot sauce and salt. Mix everything well. The mixture should hold together – if it’s too loose, add a little more breadcrumbs.
  • Shaping and baking Preheat the oven to 180 °C. Line a baking tray with parchment paper. Shape small balls or patties from the mixture, place them on the tray and lightly brush with olive oil. Bake for about 15 minutes until golden, turning halfway through baking.
  • Preparing the dip Sauté the onion in a little oil until golden. In a bowl mix the tomato sauce, sour cream, mustard and the sautéed onion. Stir into a smooth dip.
  • Serving Serve the balls warm, ideally immediately after baking, together with the tomato-mustard dip.
