Preserving vegetables in the style of Korean flavors brings to your table crunchy, juicy and spicy tomatoes enriched with pepper, carrot, herbs and garlic. This „finger-licking“ treat is suitable as a winter side dish with meat, with rice, or just as a snack.

Preparation procedure

  • Preparing the vegetables Cut the peeled tomatoes in half. Grate the carrot, cut the pepper into strips, press the garlic and slice the feferonka into thin rounds. Place everything into a large bowl and make a space in the middle for the hot dressing.
  • Preparing the hot dressing Heat a little oil in a pan or small pot, add the chopped onion and sauté until golden. Pour in the remaining oil, warm briefly, but do not let it boil.
  • Marinating Sprinkle the salt, sugar, coriander and pepper into the bowl with the vegetables. Pour over the hot oil with the onion, add the chopped parsley and vinegar. Mix thoroughly until the vegetables release their juices.
  • Resting Let the vegetable mixture rest at room temperature for 60 minutes. During this time gently stir it 2–3 times so the marinade penetrates all the ingredients.
  • Filling jars and sterilization Fill into clean, sterilized jars (e.g. 3× 1 l). Pour the remaining juices from the bowl over the vegetables as well. Close the jars with lids and place them in a pot lined with a towel. Pour hot water up to the „shoulders“ of the jars, bring to a boil and sterilize for 20 minutes.
  • Sealing and storage Seal the finished jars tightly, turn them upside down and wrap them in a towel until they cool. Store in a cool, dark place; they will keep for up to a year.
