- Peel the potatoes and grate them on a coarse grater. Then place them in a bowl of water, let them soak for a few minutes (the starch will be released) and drain.
- It's good to dry the potatoes as much as possible (I put them in a cloth and wring them out well).
- In a pan with holes (10 cm) heat a little olive oil and add the potatoes – thanks to the round holes we get perfect round pancakes – I salt them only in the pan.
- Fry them until the potatoes are golden on both sides.
- Transfer 3 pancakes to a baking sheet lined with parchment paper and place a slice of ham and a slice of cheese on them and cover with a potato pancake.
- Place in a preheated oven at 180 degrees, where we let them bake for about 10 minutes so that the cheese melts.
