Preparation procedure

  • Preparation of the potato dough Peel the potatoes and onion and grate finely into a bowl. Let stand for 5 minutes, then pour off the released juice and squeeze out the excess liquid. Add the grated carrot, crushed garlic, egg, all-purpose flour, salt and pepper. Mix everything thoroughly.
  • Frying the patties Heat oil in a pan. Scoop the batter with a spoon and shape patties about 8 cm in diameter. Fry until golden on both sides (3–4 minutes on each side). Remove to a paper towel to absorb excess fat.
  • Preparing the chicken filling Cut the chicken breasts into small cubes. Heat oil in a pan, salt the meat, season with dried garlic and curry. Fry, stirring constantly, for 6–8 minutes, until the meat is cooked through.
  • Mushroom-cream sauce In another pan, heat the butter with the oil, sauté the finely chopped onion and the mushrooms sliced into rounds. Simmer for 5 minutes, season with salt and pepper, pour in the cream and cook briefly until the sauce slightly thickens. Mix with the fried chicken.
  • Assembly and baking Cut each patty in half, spread a tablespoon of the chicken and mushroom mixture on one half, sprinkle with mozzarella and cover with the other half of the patty. Place them on a baking sheet lined with parchment paper, sprinkle with the remaining mozzarella and bake for 5 minutes in an oven preheated to 180 °C, until the cheese melts and turns lightly brown.
  • Finishing Sprinkle the finished patties with finely chopped spring onions and serve immediately while they are still warm and crispy.
