Preparation procedure
- Preparation of the starter: Crumble the yeast into a little lukewarm milk and add a teaspoon of sugar. Leave in a warm place until the starter rises (approx. 10 minutes).
- Mixing the dough: Sift the flour into a bowl, add the salt, the remaining milk, oil and the risen starter. Mix everything well and work into a smooth dough. Cover with a cloth and let rise in a warm place for about 1 hour.
- Shaping the rolls: After rising, divide the dough into 12 larger or 16 smaller pieces. Shape each piece into a roll and let them rise on the baking sheet for another 15–20 minutes.
- Brushing and baking: Brush the rolls with the mixture of egg white and oil. Sprinkle with coarse salt, caraway, sesame or poppy seeds to taste. Bake in a preheated oven at 200 °C for about 15 minutes until golden.
- Serving: Let the rolls cool slightly, but they're most delicious when still warm!
